Vegan Artichoke Spinach Spread on Zucchini Rounds (GF,DF,SF,V)
1 cup artichoke hearts, not marinated
1 cup fresh baby spinach leaves
1/3 cup soaked pine nuts, sunflower seeds, or cashews (whatever you have on hand)
1 T nutritional yeast
1/2 tsp sea salt
1/4 tsp cayenne pepper
4 T olive oil
In small food processor, chop the nuts first. Add the rest of the ingredients and blend well until smooth.
Loved this! I had some left over artichokes in the fridge from yesterday. Trader Joe's sells artichokes frozen in bags and they are delicious! You can just pull out what you want and steam them for about 4 minutes. So this isn't a raw recipe! It really resembled the artichoke spinach dip I used to make with mayonnaise and parmesan cheese! The nutritional yeast gives it the cheesy flavor and the nuts and olive oil give it the creaminess. This would be great doubled for a party!
